spicy cooked spareribs

500 gr spare ribs
1500 ml water
4 shallots
8 rawits (small chilies)
1 clove garlic
3 tomatoes
1 leek
1 sereh (lemongrass)
4 cm jahe (ginger)
5 jeruk purut / kaffir lime leaves
1 kunyit leaf (turmeric/curcuma)
1 pinkel leaf (fennel)
7 mint leaves
1 sprig parsley
1 sprig kemangi (lemon basil)
1 lime juice
salt to taste
100 ml pork blood (optional)

Cara membuat:
Slice the shallots and the garlic fine, halve the rawits lengthwise, cut the tomatoes in parts, the leek and the pasrley coarse. Pound or grind the jahe into a paste. Pick the kemangi leaves of the sprig.
Heat in a pan the water and add the ribs and cook it slowly for 1 hour. Add the remaining ingredients, except the blood, the lime juice and the salt, and let it simmer for 15 minutes. Add the blood, the salt and the lime juice and let it simmer 10 minuted. Then serve.
