fried shrimp pangsit with peanut sauce

200 gr large shrimps / king prawns
50 gr dried shrimps
100 gr rice mushrooms / chestnut mushrooms
100 gr bamboo shoots, cooked
3 shallots
4 cloves of garlic
1/2 tsp pepper
1/2 tsp kecap asin
1/4 tsp salt
1 tbsp cornflour + 1 tbsp water
45 pangsit /wonton sheets
200ml water

Bahan saus:
sauce ingredients:
100 gr peanuts, fried
6 red rawits
2 tsp vinegar
6 tsp palm sugar
1/2 tsp salt
6 tbsp hot water

Cara membuat:
Heat in a pan some oil and fry the dried shrimps until golden brown and then pound or grind them fine. Cut the mushrooms into pieces. Cut the bamboo shoots julienne. Pound or grind the shallots and garlic into a paste. Clean the shrimp.
Heat the water in a pan and cook the shrimp. Drain the shrimp well and then chop it finely.
Heat 2 tbsp oil in a pan and fry the shallots and garlic for 3 minutes. Then add the mushrooms and fry them until the moisture has evaporated. Then add the cooked and dried shrimps along with the bamboo shoots and mix well. Then mix in the salt, kecap and pepper.
Take a pansit sheet and spoon 1 tsp of the shrimp mixture on it. Fold it up like a rectangle and close it with the cornstarch solution.
Heat the oil in a pan and fry the pangsit until golden brown and serve with the sauce.

Pound or grind the peanuts and rawits fine into a paste. Mix in the salt, palm sugar and vinegar. Heat the water in a pan and add the peanuts and bring to the boil while stirring until the sauce has thickened.
