Abon ayam suwir
dry fried spiced chicken *

500g chicken
500 ml coconut water
150 ml santen asli
1 lemongrass
2 cm laos
4 jeruk purut
6 tbsp palm sugar
6 shallots
4 cloves garlic
6 red chilies
2 cm laos
1 tbsp ketumbar
2 tsp asem
1 tsp salt
Cara membuat:
Pound or grind the ingredients for the bumbu fine into a paste. Cook the chicken in coconut water until tender with the jeruk purut, the galangal and lemon grass. Remove the chicken from the pan and shred the chicken.
Add the paste, the santen and the shredded chicken to the broth and cook it, while stirring, until dry.
Heat in a pan the oil and fry the chicken until brown and dry. Spoon in for extra taste some bawang goreng and fried garlic.
* Use as a topping for rice dishes
