Sambal Goreng Daging Cincang
meatballs in saus

350 gr minced meat
1 egg
salt to taste
1 lemon grass, crushed
3 salam leaves
3 asem kandis
100 gr peanuts
100 gr petehbeans (stinkbeans)
100 ml thick coconut milk (santen asli)

8 kemiri nuts (candle nuts)
1 tbsp palmsugar
8 shallots
6 clove garlic
5 red lomboks (large chilies)
4 cm laos (galangal)

Cara membuat:
Mix the mince with the egg and the salt and form small meatballs. Heat in een wok the oil and deep fry the balls until golden brown. Remove the balls but keep them warm. Pour out the oil but leave 3 tbsp.
Pound or grind the ingredients for the bumbu into a paste. Fry the paste with the lemongrass, the asem kandis and the salam for 3 minutes. Then add the peanuts and the peteh and fry it for 1 minute. Then add the coconut milk and let it simmer for 2 minutes. Add the meatballs, remove the asam kandis and serve.
