Pindang Daging
braised beef from Central Java (Kudus)

350 beef (breast)
2000 ml of water
50 g melinjo leaves
2 salam leaves
1 tsp salt
1/2 tsp palm sugar
1/4 teaspoon pepper
1 tbsp asam water (1/2 tsp tamarind dissolved in 1 tbsp water)
500ml coconut milk
1 tbsp oil
6 shallots
5 cloves garlic
3 kluwek
2 cm laos
Cara membuat:
Heat in a pan the water and cook the meat. Remove the meat from the pan and cut into pieces. Allow 500 ml of stock behind. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the oil and fry the paste with the salam for 4 minutes. Add meat and mix. Add the broth and coconut milk and cook gently until the sauce begins to thicken. Add the pepper, the palmsugar and melinjo leaves and cook until tender. Mix in the asam water and serve.
