Tongseng kikil
braised ribs in a spicy fragrant sauce

ingredients we:
500g kikil (ribs / shank of beef)
500 ml of water
800 ml santen cair
2 salam leaves
2 cm jahe
1 lemongrass stalk
5 shallots
5 green rawits
150g cabbage
1/2 tsp salt
1/2 tsp pepper
2 tbsp kecap manis
2 spring onions
1 tomato
2 tablespoons oil
Haluskan kikil:
Bumbu kikil:
2 cm jahe
2 salam leaves
4 cloves garlic
3 shallots
3 nuts kemiri
3 cm kunyit
2 cm jahe
1 tsp ketumbar
1/2 tsp jinten
2 cardamom pods
Cara membuat:
Cut the cabbage into pieces, the shallots into slices and tomato into small wedges. Cut the onion into small pieces and rawits into thin strips. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the water and add the meat, the jahe and the salam and cook the meat until done. Heat in a pan the coconut milk and add the paste, the salam, the jahe and lemongrass and bring to the boil.
Heat in a pan the oil and fry the shallots and the rawits for 3 minutes. Add the cabbage, the  salt and pepper and cook until the cabbage is soft. Add the kecap, the coconut milk and the meat and bring to a boil. Add the tomato and onion and cook until tender. Serve.
