roasted chicken in sauce
1 small chicken
4 cloves garlic
200 ml thick coconut milk (santen asli)
3 jurut purut leaves (kaffir lime)
3 tbsp water
1 tsp trassi (shrimp paste)
1/2 tsp kencur (bitter root)
1 lemon grass
Roast the chicken over in charcoalfire for 45 minutes. Cut the meat from the bone and slic it into small strips. Slice the jerut purut thinly and mix it wit the water. Pound it until the water colorizes. Slice the shallots and the garlic thinly.
Pound the ingredients for the bumbu into a paste and mix it with th shallots and the garlic. Heat in a wok the concunut milk with the bumbu, the water and the salt and cook it slowly until the sauce had thickened. Put the meat on a plate and pour the sauce n top of it.
