Ayam Bekakap
roasted seasoned chicken

1 chicken
500 ml thick coconut milk (santen asli)
3 salam leaves
salt to taste

4 shallots
5 cloves garlic
4 red lomboks (spanish chilies)
3 cm jahe (ginger)
3 cm kencur (bitterroot)
5 cm kunyit (turmeric)
3 cm laso (galangal)
1 sereh (lemongrass)
1 tomato
8 kemiri (candlenuts)
1 tsp ketumbar (coriander)
1 tbsp gula jawa (palm sugar)

Cara membuat:
Pound or grind the ingredients for the bumbu into a paste. Cut the chicken breast side about half lengthwise. Heat a wok the coconut milk and mix it with the bumbu, the salt to taste and the salam leaves. When the coconut milk boils add the chicken, turn off the heat and let the meat marinate for 1 hour.
Drain the chicken and roast it brown and done on a charcoal fire. Brush the chicken with the sauce regularly.
