Ayam Goreng Teri
fragant fried chicken

1000 gr chicken
250 ml santen asli (thick coconut milk)
3 jeruk purut / kaffir lime leaves
3 salam leaves
4 tbsp oil

3 shallots
5 cloves garlic
2 tsp trasi bakar (fried shrimp paste)
2 tsp asem (tamarind)
1 1/2 tbsp ketumbar (coriander)
1 tsp palmsugar
salt to taste

Cara membuat:
Pound or grind the ingredients for the bumbu into a paste. Cut the chcken into large pieces. Heat in a wok the santen and add the bumbu, the salam, the jeruk purut. Then add the chicken and let it simmer slowly for 30 minutes. Remove the chicken and let it drain. Heat in a skillet the oil and fry the chicken golden brown.
