Ayam Panidar
seasoned roasted chicken

1 chicken (900 g)
1/2 tsp salt
2 tbsp lime juice
2 jeruk purut leaves
3 tbsp grated coconut, toasted
1 lime, juice
250ml water
2 tbsp oil

2 serai/sereh/lemon grass
5 cm lengkuas/laos/galangal
3 cm kunyit
2 cm jahe/ginger
9 shallots
6 cloves of garlic
15 red rawits
3 tbsp andaliman pepper

Cara membuat:
Cut the chicken into 10 pieces and rub it with the salt and lime juice and let it rest for 30 minutes. Then roast the chicken over a charcoal fire until dry and brown and set aside. First roast the ingredients for the bumbu over a charcoal fire and then pound or grind it into a paste.
Heat the oil in a pan and fry the bumbu together with the jeruk purut for 5 minutes. Then add the water and bring to a boil. Then add the coconut and lime juice and mix well.
Then add the chicken and cook slowly until tender and until the sauce has thickened. Serve.
