Ayam Lodho
spicy seasoned chicken

1 chicken
5 cm jahe
2 cm lengkuas/laos
1 serai/sereh/lemon grass
2 salam leaf
3 jeruk purut leaves
1 tsp palm sugar
1 tbsp salt
1 tsp pepper
1 tsp ketumbar
2000 ml coconut milk (from 1 coconut)
5 tbsp oil

12 shallots
12 cloves of garlic
13 red rawits
3 red lomboks
3 kemiri/candlenuts
2 cm kunyit

Cara membuat:
Roast the chicken over a charcoal fire until brown and then cut it into pieces. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu for 5 minutes. Then add the salam, the jeruk purut, the jahe, the laos, the serai, the ketumbar and the pepper and mix well. Then add the chicken and mix well.
Then add the coconut milk, salt and palm sugar and cook for 60 minutes until done and the sauce thickens. Serve.
