Pallu Kaloa Ayam
fried spicy chicken

1 chicken
1 tg salt
1 tbsp lime juice
150 gr grated coconut
1/4 nutmeg
4 cm cinnamon
4 cloves
3 salam leaf
500ml water
4 tbsp oil

7 shallots
4 cloves of garlic
1 tbsp ketumbar, toasted
1/2 tsp jinten, roasted
1 tsp pepper
3 serai/sereh/lemon grass, white part
1 cm lengkuas/laos/galangal
3 keluak
2 tsp palm sugar

2 tbsp bawang goreng

Cara membuat:
Cut the chicken into pieces and rub it with the salt and lime juice and let it rest for 10 minutes. Roast the coconut until golden brown and then pound or grind it fine. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu together with the nutmeg, cinnamon, cloves and salam for 6 minutes. Then add the chicken and fry until the chicken changes color.
Then add the water and the coconut and bring to the boil while stirring. Then cook over low heat until the chicken is done and the sauce has thickened. Sprinkle the bawang goreng on top and serve.
