Ayam Goreng Padang

Bahan-bahan:
ingredients:
1 chicken
10 cm lengkuas/laos/galangal
1 serai/sereh/lemon grass
4 jeruk purut leaves
2 salam leaf
5 tbsp lime juice
1 tsp salt
250ml water
oil
Haluskan:
bumbu:
11 cloves of garlic
4 cm jahe/ginger
3 cm kunyit
7 kemiri/candlenuts, roasted
1/2 tsp palm sugar
1/2 tsp pepper
1 tsp salt
Cara membuat:
preparation:
Cut the chicken into 6 pieces. Rub the chicken with the lime juice and salt and let it rest for 15 minutes. Then rinse. Pound or grind the ingredients for the bumbu into a paste. Grate the lengkuas.
Heat in a pan 3 tbsp oil and fry the bumbu together with the salam, the serai, the lengkuas and the jeruk purut for 4 minutes. Then add the chicken and the water and cook until the chicken is done and the liquid has almost evaporated. Then let the chicken cool down.
Heat in a pan oil and fry the chicken until golden brown and set aside. Then fry the bumbu with the herbs until golden brown and spoon it over the chicken and serve.
