Bebek Mekuah Manis Lalah
duck in sweet spicy sauce

1 duck (1500 gr)
6 green rawits (small chilies)
3 lemongrass
5 tbsp oil
225 gr base megenep
8 cardemon
2 tbsp melted palsugar
2 tbsp vinegar
300 ml water
300 ml santen asli (thick coconut milk)
salt to taste
2 sprigs celery

8 shallots

Cara membuat:
Cut the shallots into thin slices. Cut the rawits lenghtwise and the duck in chuncks. Heat in a wok the oil and fry the shallots golden brown and let in drain on kitchen paper. Add the cardemon and the base and fry it for 2 minutes. Then add the duck and the lemongrass and fry it for 3 minutes. Add the palmsugar, the water and the vinegar and let it simmer for 40-45 minutes until the fluids have evaporated. Then add the santen, the salt and the rawits and let it simmer for 5 minutes. Stir in the celery leaves and garnish it with the fried shallots.
