Ayam Nasu Palekko
very spicy fried chicken

700 gr chicken thighs
3 tbsp asam water
3 tbsp oil
2 serai / sereh / lemongrass
1 cm Lengkuas / galangal
3 salam leaf
1 tbsp palm sugar
2 tsp salt
1 tsp pepper
4 jeruk purut leaves

6 cloves of garlic
9 shallots
30 red rawits

Cara membuat:
Cut the chicken into cubes and rub it in with the asam water. Cut the jeruk purut finely. Pound or grind the ingredients for the bumbu into a paste
Heat the oil in a pan and fry the bumbu together with the serai and the laos for 7 minutes. Then add the chicken with the asam water, followed by the palm sugar the salt and the pepper and mix well. Fry the whole until tender and until the moisture is halved. Spoon the jeruk purut through and serve.
