Ayam Mercon
very spicy chicken (fireworks)

1 chicken
1 teaspoon lime juice
2 salam leaves
2 jeruk purut
2 sereh/lemongrass (white part)
2 cm galangal
1/2 tsp salt
1/2 teaspoon pepper
1 tsp palmsugar
250 ml chicken stock (see recipe)
9 red chilies
11 red chillies/bird's eye
1 tsp ebi
6 shallots
4 cloves of garlic
Cara membuat:
Cut the chicken into 20 pieces. Marinate the chicken with lime juice, salt and pepper for 15 minutes. Heat in a pan, the oil and cook the chicken brown and set aside. Pound or grind the ingredients for the bumbu into a paste.
Heat in a pan 3 tbsp oil and fry the bumbu with the salam, the jeruk purut, the lemongrass and galangal for 4 minutes. Add the chicken and mix well. Add the palm sugar and broth and cook gently until done and the sauce has thickened.
