Ayam Penyet Kemangi
fried spiced chicken with sambal and kemangi

1 chicken
2 salam leaves
4 jeruk purut
500 ml of water
1 tbsp salt
1/2 tsp pepper
4 shallots
4 cloves of garlic
3 tsp ketumbar
3 cm kunyit
Bahan sambal:
sambal Ingredients:
15 red chilies
12 red rawits / bird's eye
10 cloves of garlic
3 tomatoes
1 tsp trassi
2 teaspoon salt
3 tsp palmsugar
10 sprigs of kemangi (lemon basil)
Cara membuat:
Cut the chicken into 10 pieces. Pound or grind the ingredients for the bumbu into a paste. Heat in a pan the water with the salam, the jeruk purut and the paste and add the chicken. Cook the chicken and then scoop from the pan and drain well.
Heat in a pan enough oil and cook the chicken brown and crisp. Roll the chicken through the sambal.

Preparation chilli pepper:
Cut the chilies, the rawits and garlic into thin strips. Chop the tomatoes. Heat in a pan 2 tbsp oil and fry the chilies, the rawits and garlic for 3 minutes. Add the tomatoes, the shrimp paste, salt and palm sugar and fry for 3 minutes. Spoon in the kemangi leaves. Pound the sambal fine.
