typical chicken from West Sumatra

1 chicken
6 jeruk purut/kaffir lime leaves
1 kunyit leaf
2 lemongrass
2 asam kandis
200 ml santan asli (thick coconut milk)
300 ml santen cair (thin coconunut milk)
2 bunches (300 gr) cassava leaves, boiled/cooked
1/2 tsp salt
1/2 tsp pepper
1/2 tsp palm sugar
banana leaf
7 red large chilies
6 red rawits/bird's evy chilies
8 shallots
7 garlic cloves
2 cm jahe
2 cm kunyit
1 1/2 tsp ketumbar
Cara membuat:
Cut the chicken into four pieces. Pound or grind the ingredients for the bumbu into a paste.
Line a pan with banana leaf and put the chicken pieces on top. Mix the santan cair with the paste, pepper, salt and palm sugar Pour over the chicken and add to jeruk purut, the lemongrass, the asam kandis and kunyit. Cook the chicken slowly until done and until the liquid has evaporated. Add the santen asli and mix and everything. Stir in the cassava leaves and cook the whole until the sauce has thickened and serve.
