roasted chicken with sambal

1 chicken
3 salam leaves
2 serehstengels
3 tablespoons oil
11 shallots
6 cloves garlic
2 cm kencur
4 cm laos
2 cm kunyit
4 candle nuts
4 red chilies
7 red pepper Keriting
1/3 tsp salt
1/2 tsp palm sugar

9 shallots
5 cloves garlic
6 red chilies, seeded
6 red peppers keriting, deseeded
1 tsp shrimp paste bakar
1/2 tbsp salt
1/2 tbsp palm sugar
1 tsp lemon juice
Cara membuat:
Pound or grind the ingredients for the bumbu fine into a paste. Cut the chicken into 8 pieces and marinate it with the paste, the salam and lemon grass for at least 30 minutes. Then roast the chicken slowly over a charcoal fire until golden brown. Then pull the meat apart and mix it with the sambal.
Pound or grind the ingredients for the sambal into a paste. Heat in a pan the oil and fry the chilli paste for 5 minutes.
