Ayam tururuga
stewed in coconut milk spicy chicken from North Sulawesi

1 chicken
1 tsp lime juice
2 tsp salt
3 pandan leaves
8 jeruk purut
1 lemongrass stalk
500 ml santen cair
1 tsp palm sugar
100 ml santen asli
2 bunches kemangi
2 tablespoons oil
5 kemiri nuts
3cm kunyit
5 red rawits
3 red chilies
11 shallots
3cm jahe
Cara membuat:
Cut the chicken into 10 pieces and marinate it with the lime juice and 1 tsp salt and leave for 15 minutes. Cut the pandan into pieces of 3 cm. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the oil and fry the paste, the jeruk purut, the pandan and lemongrass for 5 minutes. Then add the chicken and fry it. Add the santen cair along with the salt and the palm sugar and bring to the boil. Add the santen asli and stir until the chicken is cooked. Spoon through the kemangi leaves and serve.
