Sinigang na Baka
soup with ribs

Ingredients:
1400 gr short ribs, beef brisket ribs
2000 ml of water
1 onion
2 tomatoes
1 tbsp fish sauce
3 green Lomboks
6 gabi/taro pieces
15 cm labanos/daikon/rammenas/rettich
1 bunch of kangkung
15 tamarind + 200 ml water
1 tsp salt
1 tsp pepper

Preparation:
Cut the ribs into pieces. Cut the onion into cubes. Cut the tomatoes into wedges. Peel the gabi and cut it into pieces. Peel the labanos and cut them into 1 cm thick slices. Cut the kangkung into pieces. Halve the lomboks and cut them into pieces.
Heat the water together with the tamarind in a pan and bring to the boil. Mash the tamarind finely and then strain it.
Heat the water together with the meat in a pan and bring to the boil. First remove the foam/scum and then add the onion, tomato and fish sauce. Then simmer over low heat and covered for 90 minutes until the meat is tender.
Then add the gabi and cook for 7 minutes. Then add the lomboks and labanos and cook for 4 minutes. Then add the salt, pepper and asam water and mix well. Then add the kangkung and cook for 1-2 minutes. Serve.
