Adobo sa Gata
pork stewed in a spicy sauce
Ingredients:
1400 gr pork shoulder
1 onion
1 bulb of garlic
1 tsp peppercorns
2 bay leaves
225 ml of water
125 ml vinegar
125 ml soy sauce
240 ml coconut milk
3 red lomboks
salt to taste
1 tbsp oil
Preparation:
Cut the meat into large cubes. Finely chop the onion and chop the garlic. Cut the lomboks into thin rings.
Heat the meat in a pan together with the onion, garlic, peppercorns, bay leaf, water, vinegar and soy sauce and bring to the boil. Skim the foam/scum from the pan. Then let it simmer on low heat and covered for 30 minutes until the meat is tender.
Drain and reserve 240 ml of the stock and the solids. Heat the oil in a pan and add the meat and solid parts and fry the meat until brown on all sides. Then add the stock, coconut milk and lomboks and bring to the boil while stirring. Then simmer over low heat and covered for 15 minutes until the meat is done and the sauce has thickened. Sprinkle the salt over it and serve.
