beef in oyster sauce

350 g beef (sirloin)
3 spring onions
5 cm ginger
4 chinese dried mushrooms
100 g snow peas
4 tbsp oil

ingredients marinade:
1 tbsp kecap
1 tbsp rice wine
1 tsp sugar
2 tsp cornstarch

ingredients sauce:
1 tbsp rice wine
1 tbsp kecap
1 tsp rice wine vinegar
2 tbsp beef stock
2 tbsp oyster sauce

2 tsp sesame oil
1 thinly sliced ​​lombok (Spanish chilie)

Cut the meat into thin strips and ginger in slices. Mix the meat with the marinade and leave for 30 minutes. Cut the white and green of the spring onions into pieces separately. Soak the mushrooms for 30 minutes in water and then squeeze it out and cut it into pieces.
Heat the oil in wok and fry the meat for 2 minutes and then scoop it out of the pan. Then fry the spring onion and ginger for 30 seconds. Then add the mushrooms and snow peas and fry for 30 seconds. Then add the wine, the kecap, the vinegar, the stock and oyster sauce. When the sauce begins to thicken then add the meat back and cook until the sauce has thickened. Put it all on a dish and sprinkle with the sesame oil and the strips of lombok.
