Suàn Ní Bái Ròu - 蒜泥白肉
Sliced pork with garlic dressing
Ingredients:
450g pork belly
2 spring onions
7cm jahe
1 tsp Shaoxing rice wine
1 tsp Sichuan peppercorns
1/2 cucumber
Water
Ingredients dressing:
3 cloves garlic, minced
2 tbsp chili oil (see recipe)
2 tbsp light soy sauce
1 tsp black rice vinegar
1 tsp palm sugar
1 tsp sesame oil
Preparation:
Chop the spring onion into pieces and thinly slice the jahe. Place the meat in a pan with the spring onion, jahe, rice wine, and peppercorns and fill the pan with water until the meat is just covered.
Heat the pan and bring the water to a boil. Then, cover and simmer over low heat until the meat is cooked through. Remove the meat from the pan and let it cool quickly. Then thinly slice the meat.
Thinly slice the cucumber into strips. Mix the dressing ingredients thoroughly.
Arrange the cucumber slices on a plate, topped with the meat slices. Spoon the dressing over the cucumber and serve.
