Seen Lo Shun Chow Ngau Yook
stir fry of beef with asparagus
Ingredients:
375 gr beef tenderloin
2 cloves of garlic
1/2 tsp salt
2 tbsp light soy sauce
13 green asparagus tops
3 shallots
2 tsp yellow bean sauce
60 ml beef stock (see recipe)
1 tsp cornflour + 1 tbsp water
5 tbsp oil
Preparation:
Cut the meat into very thin slices. Finely chop the garlic and mix with the salt, soy sauce and meat. Cut the asparagus in half diagonally. Finely chop the shallots.
Heat 2 tbsp oil in a pan over high heat. Then add the meat and stir fry it until it changes color. Then remove it from the pan.
Heat 3 tbsp oil in a pan over high heat. Then add the asparagus and stir fry for 3 minutes. Then add the shallots and fry for 1 minute and remove from the pan. Then add the stock and the yellow bean sauce and bring to the boil. Then add the asparagus again and cook the asparagus over low heat until tender.
Slide the asparagus to the side of the pan, then add the cornstarch solution and stir until the sauce thickens. Then add the meat and mix everything well and serve.
