Gai Haw Bai Toey
fried and marinated chicken in pandan leaves
Ingredients:
500 gr chicken breast
5 cloves garlic
6 coriander roots
1 tsp white pepper
1/2 tsp salt
2 tbsp oystersauce
1,5 tbsp sesame oil
1 tbsp flour
25 pandan leaves
oil
garnish:
plum sauce or chile sauce
preperation/method:
Cut the meat into 25 pieces. Pound or grind the coriander, the garlic, the pepper and the salt fine into a paste. Mix the paste with the chicken, the oyster sauce, the sesame oil and the flour and let it marinade for at least 3 hours. Wrap each piece of chicken into a pandan leaf and fold it like a package. Heat in a wok the oil and fry the packges for 9 minutes and then drain on kicthen paper. Serve it wtih the sauce.
