Gaeng Khiew Wan Gai
Green Chicken Curry (2 pp)
Ingredients:
250 gr chicken breast
3 tbsp green curry paste (see recipe)
225 ml coconut milk
4 thai small eggplants
6 sweet basil leaves
4 red chillies
2 tbsp. fish sauce (nam pla)
1 tbsp cane sugar
125 ml water
Preparation :
Slice the eggplants in cubes and the chillies lengthwise in strips. Heat a wok and add the currypaste and half the coconut milk. slice the chicken in small pieces and add it and stir-fry it until its fully cooked. Add then the remaining coconut milk, the water and the eggplants and bring it to a boil. Add the rest of the ingrediënts and let it simmer for 1 minute.
