Pindang kudus
beef in a spicy sour soup

400g beef brisket,
2000 ml of water
50 gr melinjo leaves
2 salam leaves
4 tsp salt
1 tbsp palm sugar
2 tbsp asam water
250 ml santen asli
2 tbsp oil

7 shallots
4 cloves garlic
3 kluwek
1/2 tsp trasi bakar
1 tsp ketumbar
1 cm laos (galangal)

Cara membuat:
Cut the meat into pieces. Heat the water in a pan and add the meat. Cook the meat and scoop it out of the pan. Let 1500 ml of broth behind. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu with the salam for 3 minutes. Put the meat together with the bumbu, salt, palm sugar and the asam water in the broth and cook it for 5 minutes. Then add the melinjo and santen and let it simmer slowly gently until done.
