Pecal Terung
eggplant in spiced coconut milk

2 aubergines/eggplant
1 tbsp asam water
5 kemiri nuts
1 tsp terasi/trasi
1 cm lengkuas/laos
1 red rawit
1 tbsp kecap manis
1 tsp palm sugar
125 ml thick coconut milk (kental)
2 tbsp oil

Cara membuat:
Grate the lengkuas and finely chop the rawit. Peel the aubergines and cut them into cubes. Steam the aubergines until almost done.
Heat the oil in a pan and fry the terasi and the kemiri for 2 minutes. Then add the lengkuas, the rawit, the kecap, the palm sugar, the coconut milk and the asam water and bring it to the boil while stirring. Then add the eggplant and cook over low heat until cooked through. Serve.
