Sambal Petai Lokio
spicy fried petai with tahu and chives

25 petai / peteh beans
75 gr (Chinese) chives
250 gr tahu/tofu
2 spring onion
10 red rawits
5 red lomboks
6 tbsp taoco
200 ml of water

6 red lomboks
4 cloves of garlic
1 tsp palmsugar

Cara membuat:
Cut the tahu into 10 cubes. Heat the oil in a pan and fry the tahu until brown and cooked and set aside. Cut the spring onion into pieces and the lomboks into rings. Pound or grind the ingredients for the bumbu fine into a paste. Halve the petai beans.
Heat in a pan 4 tbsp oil and fry the bumbu and the lomboks for 4 minutes. Then add the taoco and mix well and fry for another 2 minutes.
Then add the petai and the chives and fry until soft. Then add the tahu, the spring onion and the rawits and fry until soft. Add the water and bring to the boil. Serve.
