Sambal Goreng Hati dan Udang
fried spicy liver with shrimps

300 gr liver (cow's)
200 gr shrimp
1 sereh (lemongrass), crushed
3 cm laos (galangal), crushed
1 red and 1 green lombok (large chilie)
2 shallots
1 tsp palmsugar
salt to taste
300 ml santen (coconut milk)
3 tsp asem (tamarind)
7 tbsp water
2 tbsp oil

5 shallots
10 dried lomboks
3 kemiri (candlenuts)
1 tsp trassi (shrimp paste)

Cara membuat:
Soak the dried lomboks for 10 minutes in water. Pound or grind the igredients for the bumbu into a paste. Cut the liver into cubes and slice the shallots and the lomboks fine. Mix the asem with the tbsp water.
Heat in a wok the oil and fry the shallots, the lomboks, the sereh and the laos for 3 minutes. Then add the salt, the palmsugar, the liver and the shrimps and fry it slowly for 3 minutes. Add the santen and the asemwater and let is simmer slowly until the sauce has thickened. Then mix in the bumbu and let it simmer slowly until all liquids have evaporated.
