curry liver with potatoes from Jambi

500g beef liver
300g potatoes
1 lemongrass stalk
6 jeruk purut
2 salam leaves
1 tbsp asem
1 1/2 tsp salt
1/2 tsp palm sugar
600 ml santen cair
2 tablespoons oil
7 shallots
4 cloves garlic
4 red chilies
4 kemiri nuts
2cm kunyit
1/2 tsp ketumbar
1/4 teaspoon jinten
1/2 tsp shrimp paste
Cara membuat:
Cut the meat into pieces (4x4cm) and the potatoes into wedges (2,5x3 cm). Pound or grind the ingredients for the bumbu fine into a paste. Heat in a pan the oil and fry the paste with the lemon grass, the jeruk purut and the salam for 5 minutes. Add the liver and fry it for 3 minutes. Then add the potatoes, the santen, the asem, the salt and the palm sugar and cook gently until tender.
