Ayam Gongso
chicken in a spicy sweet sauce with cabbage

500 gr chicken thighs
1 lime, juice
3 jeruk purut leaves
2 serai/sereh/lemon grass
500ml water
3 tbsp kecap manis
5 red rawits
1 tomato
3 cabbage leaves
1/4 tsp palm sugar
1/2 tsp salt
3 tbsp oil

6 shallots
4 cloves of garlic
3 kemiri nuts, roasted
7 red cabai keriting (curly cayenne pepper)
1 cm jahe/ginger

Cara membuat:
Rub the chicken with the lime juice and let it rest for 5 minutes. Then rinse and cut the chicken into pieces. Cut the tomato into cubes and the cabbage leaves coarsely. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu together with the jeruk purut and the serai for 5 minutes. Then add the chicken and cook until it changes color.
Then add the water, rawits, palm sugar and salt and cook the chicken over low heat until the sauce has thickened.
Then add the kecap, tomato and cabbage and cook while stirring until the cabbage has softened. serve.
