Ayam Bakar Lumajang
roasted spicy chicken

1 chicken
1 lime, juice
1 tsp salt
3 tbsp asam water
2 tbsp water

8 shallots
5 cloves of garlic
10 red cabai keriting (curly cayenne pepper)
1 red lomboks
1 1/2 tsp terasi/trasi bakar
2 cm lengkuas/laos/galangal
1 serai/sereh/lemon grass, white part
1/2 tbsp ketumbar, toasted
2 cm jahe
1 tbsp palm sugar
1/2 tsp salt

Cara membuat:
Cut the chicken into 4 pieces. Rub the chicken with the lime juice and salt and let it rest for 30 minutes. Pound or grind the ingredients for the bumbu into a paste.
Heat a pan and fry the chicken until almost done. Then add the bumbu, the asam water and the water and fry until the sauce has thickened.
Then clamp the chicken between the skewers and roast the chicken over a charcoal fire until done and brown. Baste the chicken regulary with the sauce while roasting.
