chicken in a spicy red sauce
400 gr chicken wings
1/2 lime, juice
1 tsp salt
5 cloves of garlic
4 cm jahe
4 red cabai keriting (curly cayenne pepper)
1 red pepper
1 tsp pepper
2 tbsp saus tomat (see recipe)
2 tbsp saus sambal (see recipe)
1 tbsp palm sugar
1 tbsp cornstarch, dissolved in some water
1 spring onion
1 tsp salt
Cut the wings into pieces and marinate them with the salt and lime juice and leave it for at least 15 minutes. Heat the oil in a pan and fry the chicken brown and set aside.
Finely chop the garlic and cut the onion and paprika into thin strips, the keriting into thin slices and the tomato into cubes. Grate the jahe.
Heat 2 tbsp of the used oil and fry the garlic together with the onion, the jahe and the keriting for 3 minutes. Cut the spring onion into pieces.
Then add the paprika, pepper, saus tomat, saus sambal and the stock and bring to the boil. Then add the chicken, salt, palm sugar and spring onion and mix well and bring to the boil again.
Then add the cornstarch solution and stir until the sauce thickens.
