Jīròu chǎofàn - 鸡肉炒饭
fried rice with chicken


Ingredients:
200 g chicken fillet/breast
2 tbsp cornflour
1/8 tsp salt
1 tbsp water
2 tbsp light soy sauce
1 tbsp dark soy sauce
1/4 tsp white pepper
1 tsp sesame oil

4 cloves garlic
1 small onion / shallot
75 g mushrooms
1 red lombok
50 g red bell pepper
75 g peas
1 spring onion
400 g cooked rice (cold)
2 tbsp oil

Preparation:
Cut the chicken into small cubes and mix it with the cornflour, salt and water and let it marinate for 5 minutes.
Finely chop the garlic and cut the onion, mushrooms, bell pepper and lombok into small cubes. Finely chop the spring onion. Mix the soy sauces with the pepper and sesame oil.
Heat 1 tbsp of  oil in a pan and fry the chicken until it had changed color and remove from the pan. Then add the remaining oil and fry the onion and garlic until golden brown. Then add the mushrooms, lombok, pepper and peas and stir fry for 1 minute.
Then add the rice and soy sauces and fry while stirring until the rice is hot. Then add the chicken and fry while stirring for 1 minute. Then mix in the spring onion and serve.
