Jing Jiang Rou Si - 京酱肉丝
strips of pork in sweet bean sauce

400 gr pork fillet
2 tsp light soy sauce
2 tsp Shaoxing rice wine
1 tsp cornstarch
1/4 tsp salt
1/2 tsp white pepper
2 tbsp water
1 tsp oil
3 tbsp oil

Ingredients sauce:
3 tbsp tian mian jiang / sweet bean sauce
1 tbsp Shaoxing rice wine
1 tbsp palm sugar
2 tbsp water

Tofu skins wraps
cucumber, strips
spring onion, strips

Cut the meat into thin strips. Then mix in the soy sauce, rice wine, cornflour, salt, pepper and water until the meat becomes sticky. Then mix in the teaspoon of oil and let it marinate for at least 10 minutes. Mix the ingredients for the sauce well.
In a pan, over high heat, heat the oil, then add the meat and fry, stirring, until it changes color. Then remove it from the pan and set aside.
Then over low heat add the sauce and let it simmer until it starts to thicken. Then add the meat again and mix well. Serve as a wrap.
