Tum Kha Gai
spicy soup with chicken and coconut milk

ingredients:
100g chicken breast
100 ml of water
150 ml of coconutmilk
5 cm laos
1 lemongrass stalks
5 jeruk purut / kaffir lime leaves
1 sprig of cilantro
7 red rawits
1 tbsp lemon juice
1 tsp salt
3 tbsp fish sauce
 
Preparation:
Cut the meat into thin strips. Chop the lemongrass and galangal finely and crush the rawits. Heat in a pan the water and add the laos, the lemon grass, the jeruk purut and salt and bring to the boil. Add the chicken, fish sauce, lemon juice and coconut milk and simmer for 5 minutes. Add the rawits and cilantro leaves and simmer 1 minute until done.
