Sop Kambing Tanah Abang
spicy soup with lamb

500g lamb with bone
2000 ml of water
2 cm jahe
2 tablespoons salt
7 cloves
5cm cinnamon
1 whole nutmeg
5 tomatoes
3 chives
3 tablespoons oil
9 shallots
6 cloves garlic
1/2 teaspoon pepper
1 stalk celery leaves
2 tbsp Bawang Goreng
rawit sambal (see recipe)
Cara membuat:
Cut the meat into pieces. Heat in a pan the water and add the meat, the jahe and the salt and cook the meat until done. Remove the meat from the pan and remove the meat from the bones.
Pound or grind the ingredients for the bumbu fine into a paste and halve the nutmeg.Heat in a pan the oil and fry the paste along with the cloves, cinnamon and nutmeg for 5 minutes. Add this to the broth along with the meat and bring to a boil. Slice the tomatoes and chives into small pieces and add it and cook another 5 minutes. Cut the celery into small pieces and sprinkle with bawang goreng over the soup and serve it with the sambal.
