Gado Gado Kota Padang
Mixed vegetables with peanut sauce from south Sumatra

250 gr of potatoes
2 eggs
100 gr soun (glass noodles)
100 g cabbage
50 gr tauge / bean sprouts
250 g cucumber
2 tablespoons of oil

Bahan sauce kacang:
Ingredients peanut sauce:
250 gr peanuts
2 red lomboks
6 shallots
6 cloves of garlic
3 kemiri/candlenuts
1/2 tsp salt
2 tbsp kecap manis
5 cm laos
3 cm jahe
1 sereh / lemon grass
4 jeruk purut leaves
250 ml coconut milk
1 tsp palm sugar

Emping or prawn crackers
2 tbsp bawang goreng

Cara Membuat:
Boil the potatoes in water and the eggs hard, soak the soun in warm water and then drain and blanch the bean sprouts. Cut the potatoes into 8 pieces as well as the eggs.
Cut the cabbage finely, peel the cucumber and slice it finely. Mix the potatoes, the eggs, the soun, the cabbage, the tauge and the cucumber well. Pour the peanut sauce on top of the mixed vegetables and sprinkle it with the goreng and the emping.

Sauce kacang:
Pound or grind the peanuts, lomboks, shallots, garlic and kemiri into a coarse to fine paste. Grate de laos.
Heat in a pan the oil and fry the pasta with the laos, the jahe, the sereh, the salam and the jeruk purut for 4 minutes. Add the salt, the palm sugar, the kecap and the coconut milk and while stirring bring to the boil. The sauce is ready when the oil is shown.
