Ikan Panggang Sambal Mangga

2 pomfrets (butterfish) 300 gr each
1 tsp salt
1 tsp lime squash
2 tbsp oil

Baha-bahan marinade:
ingredients marinate:
3 tbsp kecap manis
1 tbsp melted butter
3 cloves garlic
1/2 tsp salt
1/2 tsp pepper

Bahan-bahan saus:
ingredients sauce:
1 mango
2 kaffir lime / jeruk purut leaves
1 tomato

6 red lomboks
11 red rawits
3 shallots
1 tsp trasi bakar
1 tsp salt

kemangi leaves

Cara membuat:
Clean the fish and rub it in with the salt en the lime squash. Pound or grind the ingredients for the bumbu fine into a paste. GRate the mang and slice the jeruk purut, the tomato and the garlic fine. Mix the kecap, the butter, the garlic, the salt and the pepper into a marinate. Grill the fish slowly above a charcoalfire until done.

Heat in a wok the oil and fry the bumbu for 2 minutes. Add the mango, the tomato and the jeruk purut and let it simmer slowly until it becomes a suace. Garnish the fish with the kemang and serve it with the sauce.
