Udang Kuah Asam Segar
shrimp stewed in a light sour spicy sauce

400 gr udang jerbung / banana shrimp / prawns or tiger prawns
1 salam leaf
2 cm lengkuas / galangal
3 cm kunyit
3 cm jahe
2 serai / sereh / lemongrass
5 red lomboks
5 green lomboks
6 green tomatoes
1000 ml of water
2 tsp salt
1 tahu takwa / kuning
1 tsp palmsugar
2 tbsp oil
1 bunch of kemangi

5 shallots
3 cloves of garlic

Cara membuat:
Peel the shrimps and clean them. Cut the lomboks into thin rings and the tomatoes into wedges. Cut the tahu into cubes. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu together with the salam, the laos, the kunyit, the jahe and the sereh for 5 minutes. Then add the lomboks, the tomatoes and the shrimp and mix well.
Then add the water, salt and palm sugar and mix well. Then add the tahu and cook until done. Then mix in the kemangi and serve.
