Ayam Bumbu Terasi
in coconut milk braised chicken with shrimp paste

1 chicken
4 jeruk purut / kaffir lime leaves
2 cm jahe / ginger
2 salam leaves
2 cm laos / galangal
600ml coconut milk
1/2 tbsp salt
1/2 tsp palm sugar
1 spring onion
2 tbsp oil
1/2 tbsp shrimp paste
2 kemiri / candlenuts
5-6 shallots
4 cloves garlic
3 red chilies
1 cm kencur / bitterroot
Cara membuat:
Cut the chicken into 10 pieces and the spring onion in diagonally cut pieces. Crush the jahe and Laos. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the oil and fry the paste with the jeruk purut, the jahe, the salam and the laos for 5 minutes. Add the chicken and fry until brown. Add the coconut milk, salt and palm sugar and cook gently until tender. Spoon in the spring onion and serve.
