Terung Telunjuk Siram Sambal
eggplant with sambal sauce

10 Terung telunjuk (thin green eggplants)
100g rammanas
4 cloves garlic
2 salam leaves
1/4 tsp salt
1/4 teaspoon pepper
1/4 tsp palm sugar
150 ml water
1 tsp lime juice
2 tbsp oil
5 red chilies
1/2 tsp shrimp paste
2 shallots
Cara membuat:
Cut the eggplants in half lengthwise. Grate the rammanas coarsely and finely chop the garlic.
Heat in a pan the oil and fry the garlic for 1 minute, then add the eggplant and rammanas and cook it soft and tender. Scoop it from the pan and set aside. Then add the paste and salam and fry for 3 minutes. Add the salt, pepper, palm sugar, lime juice and water and bring to a boil. Pour the sauce over the eggplants and serve.
