Pound or grind the ingredients for the bumbu fine into a paste. Cut the meat into cubes and the shallots and garlic fine. Heat 2 tbsp oil and fry the shallots and garlic for 1-2 minutes. Mix the paste with the kecap, the oil, the asem and the jeruk purut and let it marinate for at least 4 hours.
Thread the meat on the skewers and cook it slowly over a charcoal fire until brown and tender. Regularly sprinkle with the marinade.
