Zī Rán Yáng Ròu - 孜然羊肉
stir-fry of lamb with jinten
Ingredients:
450 gr lamb
1 tbsp jinten
1 tbsp cornstarch
1 tbsp light soy sauce
1 tbsp Shaoxing rice wine
1 tbsp cumin seeds
1 red onion
1/4 tsp salt
3 dried lomboks
1 bunch of coriander
3 tbsp oil
Preparation:
Cut the meat into small cubes and mix with the jinten, the cornflour, the light soy sauce, the rice wine and 1 tbsp oil and let it marinate for 15 minutes. Finely chop the lomboks. Cut the coriander into pieces and the onion into thin strips.
Heat a pan and add the oil and add the meat and cook, while stirring, until it changes color and set aside.
Then add the cumin seeds and the lomboks and fry it briefly on low heat. Then add the meat and the onion and fry on high heat for 1 minute. Then sprinkle the salt and the coriander on top, mix well and serve.
