mengkudu / indian mulberry salad

100 gr mengkudu
2 tbsp palmsugar
2 tbsp fishsauce
2 tbsp lime juice
3 shalllots
6 red rawits
150 gr roasted mackerel
1 tbsp roasted peanuts, chopped

blanche the leaves in boiling water and soak them in cold water. Drain the leaves and remove the nerve. Slice the shallots and the rawits fine. Mix the palmsugar with the fishsauce and the lime juice until its dissolved. Mix it throught the leaves together with the shallots, the rawits, the mackerel and sprinkle the peanuts on top and serve.
