Sayur Nangka Kapau
stewed spiced jackfruit with vegetables

600 gr young jackfruit, peeled
10 snake/long beans
6 cabbage leaves
300 gr kikil/beef, cooked
2 tsp salt
1500 ml coconut milk (from 1 coconut)
1 kunyit leaf
2 serai/sereh/lemon grass
5 jeruk purut leaves
1 asam kandis

10 shallots
3 cloves of garlic
4 red lomboks
2 cm jahe/ginger
2 cm kunyit
1 tsp ketumbar
2 tsp salt

Cara membuat:
Cut the jackfruit into pieces of 4x4x2cm. Heat water in a pan and blanch the jackfruit for 2 minutes. Then drain the jackfruit. Cut the long beans into 10 cm pieces and coarsely chop the cabbage leaves. Pound or grind the ingredients for the bumbu into a paste. Cut the meat into pieces.
Heat in a pan the coconut milk together with the jeruk purut, the kunyit leaf, the serai, the meat and the bumbu and bring to the boil while stirring.
Then add the asam kandis and the jackfruit and cook until the jackfruit is tender. Then add the long beans and the cabbage and cook until done. Serve.
