green sambal from western Sumatra

15 green lomboks
11 shallots
3 belimbing
30 gr dried anchovies
5 tbsp oil
3 tbsp lime juice
salt to taste
1 tsp palmsugar

preperation/method:
Steam the lomboks for 15 minutes. Pound or grind the lomboks, the shallots and the belimbing coarse. Heat in a wok the oil and fry the anchovies until done. Remove the anchovies from the wok and crumble it. Add the paste and fry it for 3 minutes. Add the anchovies, the limejuice, the salt and the palmsugar and fry it a bit more.
