fried fish with prawns from Sumbawa
Bahan-bahan:
ingredients:
4 red snapper
8 tiger prawns
1 lime (juice)
5 or 6 kemiri nuts
3 shallots
1 red lombok
3 red rawits
125 ml chicken stock
1 eggplant (thin)
2 tomatoes
1/2 tsp salt / to taste
1 tsp pepper

Mix the salt and the lime juice and marinate the fish and the prawns with it for at leat 2 hours. Grill the eggplant above a charcoal fire and remove the skin. Slice the eggplant fine together with the tomatoes. Chop the basil leaves fine.
Pound or grind the kemiri, the shallots, the lombok and the rawits fine into a paste. Coat the fish and the prawns with the paste. Mix the remaining paste with the eggplant, the tomatoes, the salt, the pepper and the stock. Heat in a wok the oil and fry the fish and the prawns in 8 minutes done. Heat in a wok the eggplant mixture and laddle it on top of the fish and prawns. Garnish it with the basil leaves.
